I thought I’d put up a post for this cool refreshing lemonade to celebrate the end of the week and the beginning of the weekend. But as I was doing so I became a little depressed because we’ve gotten to that point in summer where every weekend brings us that much closer to summer’s end.
Uh oh. I seem to be doing that thing I used to do when I worked for a big corporation. The weekdays were hectic and stressful yet I always found it hard to be fully excited about Friday and the weekend because they always led right back to Monday.
Summer started off strong for us,trips to the pool,the lake,carnivals,amusement parks. It seemed like every weekend we were doing something. I don’t know about everyone else but I’m kind of winding down. Having more days where I’m excited to just do nothing.
I don’t know what is causing me to feel this way but I do know I’ve got to shake this feeling and fast. I want these next few weeks to be a combination of days full of activities and days where I do nothing except relax with a good book or take a stroll around the neighborhood.
So far today is turning out to be one of those relaxing days. Later I might take a stroll or maybe I’ll just relax with my book and a glass of lemonade. Unless,of course, there’s a carnival in town.
Recipe: rosemary,ginger lemonade
1 1/2 cups sugar
1 tablespoon candied ginger or one slice of peeled fresh ginger
2 sprigs fresh rosemary
2 cups fresh lemon juice(10 lemons)
6 cups cold water
In medium saucepan bring,sugar,1 cup of water ,ginger and rosemary to a boil;stir until sugar dissolved about 2 minutes. Stir in lemon juice and 6 cups cold water. Strain into a large pitcher. Refrigerate until cold. Serve over ice.
